I really like food. Now I know that seems a fairly obvious thing to say, everyone likes food right? Well I like it a bit more.

Sometimes that means going out to nice restaurants (though this can be seriously expensive, delicious, but expensive) or even that dirty looking restaurant deep in the suburbs that does an authentic Pho or Laksa.

There was once a time when cooking dinner for myself was a rather depressing affair. Two-minute noodles dominated, as did anythign that was pre-prepared in some capacity. Thankfully things are a bit different these days, and now I enjoy cooking. In honour of this I've jotted down one of favourite/easiest dishes to cook, Pasta all'Amatriciana. It's that winning combo of simplicity and tastiness built on top of a few fresh ingredients that's always a winner for me. Enjoy!

Pasta all'Amatriciana

Ingredients
  • 250g Mild Pancetta
  • 1 medium brown onion
  • 3 cloves of garlic
  • 2 400g tins of diced tomatoes
  • Chilli flakes
  • Olive oil
  • 400g pasta of your choice
  • Parmesan cheese
  • Basil
Cooking instructions
  1. Chop up the pancetta into small pieces, around 1-2cm each side. Finely shop the onion and crush the garlic.
  2. Heat up some oil in a fry pan and cook the onions until they are soft.
  3. Add the garlic and cook for two minutes.
  4. Add the Pancetta and cook for three to five minutes.
  5. Add the cans of tomatoes, bring the mixture to a boil and ten reduce heat. Simmer for ten minutes.
  6. While the sauce is simmering, cook the pasta until al dente.
  7. Add the chilli flakes to the sauce. Taste is as you go, the sauce should have a mild spice, not too hot.
  8. Serve the pasta with sauce on top, throw on some parmesan and basil.
