  • traditionally a sheep milk cheese
  • may be made with varying amounts of goat's milk
  • feta made from cow's milk is not traditional
  • aged cheese with grainy texture
  • suited to salads, pastries and used in baking

Stilton is a type of English cheese.

  • has characteristic strong smell
  • distinctive blue veins
  • aged for approximately nine weeks
  • always made in traditional cylindrical shape
