White Chocolate and Macadamia Cookies
Ingredients
This recipe comes from my mum (like all good recipes do!) and will make about 24 cookies.
| plain flour, sifted |
200grams |
| salt |
a pinch |
| baking powder |
1/2 teaspoon |
| unsalted butter, softened |
175grams |
| raw caster sugar |
100grams |
| medium egg |
one, lightly beaten |
| real vanilla essence |
1/2 teaspoon |
| white chocoalte (good quality) |
150grams |
| unsalted macadamias |
75grams |

Instructions
- Preheat the oven to 1800C.
- Sift the flour, salt and baking powder together.
- Roughly chop the white chocolate and macadamias.
- Cream the butter and sugar until light a fluffy.

- Beat the egg into the butter mixture and when thouroughly mixed add the flour mixture and mix until well combined.
- Stir in the vanilla, nuts and chocolate.
- Place spoonfuls of the cookie mixture (spaced well apart) onto trays lined with baking paper.

- Bake for 10 to 12 minutes or until firm but not coloured. Leave the biscuits to cool on the sheets for a few minutes and then transfer to a wire rack.

- Once cool, package the cookies for gifts as described here.
