Fried Prawns with Long Jin Tea Leaves
Ingredients:
Prawns (shelled) - 420 g
Garlic (sliced) - 1 clove
Ginger - 2 slices
Long Jin tea leaves - 4 Tbsp
Hot water - 1/2 cup
Sensonings:
Salt - 1/3 tsp
Cornstarch - 1 level tsp
Pepper and sesame oil - a little
Sauces:
Long Jin Tea - 5 Tbsp
Salt and chicken powder - each 1/4 tsp
Sugar - 1/2 tsp
Cornstarch - 1 tsp
Method:
- Devein prawns, rinse and pat dry. Slit open, mix in seasonings and marinate for 15 minutes.
- Soak Long Jin tea leaves in hot water for 5 minutes. Remove tea leaves and air dry. Heat 2 cups of oil, fry tea leaves until crispy. Drain and cool. Reserve tea for the sauce.
- Re-heat oil in wok, fry prawns until cooked. Drain.
- Heat 2 Tbsp oil in wok, saute ginger and garlic until fragrant. Return prawns and stir-fry with sauce. Mix well and cook until sauce thickens. Dish and sprinkle fried tea leaves on top.
